Very interesting ricasso, particularly on the dagger where it takes up so much of the blade. Is there a structural reason for the flared shape and nicks out of the blade, or is it all stylistic?

Well on the dagger the ricasso is that long because customer has big hands and needed enough space for a big thumb! The flared shape is just to take off some weight while the nicks are only for stylistic purpose.

Looks really beautiful! But ! Aren't these notches make the weak point? I know rapier is not made for slashing except slashing opponent's face with the tip, but in my opinion rapier will probably crack in this point :|. Evet if it looks really nice and may help to catch opponent's blade It's not worth for me to brake such an beautiful weapon !

Many rapier blades are as broad as the inner part of those notches, so it's strong enough. Plus the blade at that point is very strong, probably you'd badly bend the foible before snapping the blade there.
